Description
Jiffy Muffin Mix came in a small box of plain corn muffin mix or blueberry and also in the early 80s in lemon which I liked best. It's still sold in stores today in regular corn muffin and blueberry mix only. I wish they would make the lemon again.

I just recently used my last box of Jiffy PLAIN Muffin mix and cannot find it anywhere in any store. Is it still available and if so, where can i purchase it? Thank you, Eileen abeth118@aol.com

The blueberry muffins are really good and I haven't had the corn muffins in a liitle while, but those are good too. They now have Jiffy pancake mix also. You can still get it at Kroger and maybe other stores also.

Sometimes a recipe will call for a box of Jiffy Corn Muffin Mix and you are out. Here's a Copy Cat recipe you can make at home. This recipe is equal to one 8.5 ounce box of Jiffy Corn Muffin Mix. JIFFY CORN MUFFIN MIX COPY CAT Makes 8.5 ounces (equal to 1-box of Jiffy Corn Muffin Mix) Makes 1-1/2 cups of mix Makes 6 corn muffins 2/3 cup all purpose flour 1/2 cup yellow corn meal 3 Tbsp granulated sugar 1 Tbsp baking powder 1/4 tsp salt 2 Tbsp vegetable oil Combine flour, corn meal, sugar, baking powder and salt. Mix well with whisk. Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone. Use the above mixed ingredients in recipes calling for a box of Jiffy Corn Muffin Mix. To make corn muffins: Preheat oven to 400F. Combine above mixture with: 1 egg 1/3 cup milk Fill muffin tins 1/2 full. Bake 15-20 minutes Makes 6 muffins.

Here in Michigan you can also find a really good Oatmeal Muffin mix by Jiffy, which is awesome. Just sweet enough, with some body to it.

I live in Michigan. I have never heard of lemon muffin mix, but I am aware of corn, blueberry, apple cinnamon and raspberry muffin mixes. These mixes also make pretty good pancakes as well.

We used to carry Jiffy's Apple Cinnamon muffin mix, but my area grocery stores have stopped selling it!!! I use the recipe on the box for the best apple cobbler ever! Anyone still have the box for the recipe??

To find recipes from Jiffy cornbread mix, Google jiffy cornbread. Click on the first link to take you to jiffymix.com. They have tabs at the top of the page and one is Recipes. Click on that and then Baking Mix. That will take you to a list of recipes that you can make with the baking mix and one will be for fruit cobbler. Click on that one and it has a recipe with apples in it. I believe that may be the apple cobbler you are looking for.

I remember when Jiffy used to make cake and frosting mixes as well as the muffin mixes. I still buy the blueberry muffin mix to this day. So good!!

I used a lot of Jiffy products for so many many years. Now I wish to make an "Ole Candy Recipe" from the powder frosting mix and can NOT FIND IT. So sorry - was my husbands favorite for the holidays.

I LIVE DOWN HERE IN fLORIDA, AND JIFFY CORNBREAD MIX IS PRACTICALLY A STAPLE ON EVERY GROCERY SHELF. MAY BE A REGIONAL THING. I HAVENT SEEN ANY OTHER TYPE EXCEPT THE LITTLE BLUE BOXES OF JIFFY CORNBREAD, ALTHOUGH I KNOW I HAVE SEEN OTHER TYPES WHEN LIVING UP NORTH. Charlie from 2914 is correct, in that Jiffy dry-baking mixes originated in 1930. The Chelsea (Michigan) Milling Company still makes these. Jiffy, not like Pillsbury or Betty Crocker, still limits itself to corn bread, muffin and pie crust mixes. It amazes me, how, with so many women are out working these days, that anyone has time to bake at home anymore, and demand for products is fairly high. The star is a cartoon Jiffy box, who claims to outrank the company's president.
